Sea bass is a beautiful fish that grows up to a metre in length. As wild stocks are replenished, it is landed increasingly in the shallow waters around Cornwall.
Rick says: 'They are generally excellent eating and the plus point is their versatility. You can barbecue them or bake them whole, but they also lend themselves to be filleted and served with delicate sauces.'
Sea bass has a mild, subtle flavour with a buttery, moist and flaky texture. Whether grilled, baked or pan-seared, sea bass is a versatile and tasty choice.
