Preparing flat fish for grilling

Remove the lateral bones that run through the frills and part way into the flesh of the fish by cutting very close to the underlying fillet with scissors.

Score the fish on both sides like the veins of a leaf using a sharp knife.

Grill the fish, dark-side up, under a high heat for 7 – 8 minutes.
