How to Cook

Mussels should be cooked quickly in a very hot pan with the addition of a liquid (such as fish stock, wine, cider etc.) to create steam to open up the shells quickly – there is no need to overcook these meaty molluscs, as soon as the shells are open, they are ready to eat.
