Brush four 30 cm (12 inches) square of foil with a little olive oil and put a fish diagonally across the centre of each piece. Bring the sides of the foil up and around the fish and crimp it together tightly at each end leaving the top open.  Bake the fish for 10 minutes.

Red Mullet Fillets 

180 - 200g

Red mullet has a unique texture somewhere between white and oily fish, hugely valued in ancient Rome and historically sold for their weight in silver. Excellent source of B12 and B6, red mullet fillets are perfect to cook en papillote with fresh thyme.
