Megrim Sole Fillets 

2 x 180-200g megrim sole portions (serves 2)

Megrim or Cornish sole is a narrow-bodied, deep-water flatfish, most commonly found in Cornish waters. As an incredibly sustainable fish, it has been gaining popularity over recent years, not just for its delicious flavour, but for its environmental benefits too.

This lean fish has a delicate, flaky texture that is truly succulent and moreish, lending itself to a variety of cooking methods.

The light, delicate flavour perfectly complements fresh flavours, such as lemon, dill, white wine and parsley, whilst a simple sprinkle of salt brings out the natural flavours. For an easy, but delicious meal at home, serve with a white wine sauce, potatoes, grassy vegetables and a few sprigs of parsley to garnish. Simply delicious.
