Best to pan-fried the whole Dover Sole as there are no bones in the fillets and the skeleton stays intact during and after cooking.

An aromatic, zesty Sauvignon Blanc so good that we stuck our name on it. Made by our friend Gavin Quinney at his Chateau in the Entre-Deux-Mers, where I think they make some of the finest Sauvignon.

"This works with a whole host of seafood and light dishes. I'm thinking a seabass ceviche, shellfish, Greek salad, fattoush salad, grilled calamari, guacamole, gazpacho, goat's cheese salad, saganaki.. the list is endless" - Charlie Stein
