Red Mullet Fillets
180 - 200g
Red mullet has a unique texture somewhere between white and oily fish, hugely valued in ancient Rome and historically sold for their weight in silver. Excellent source of B12 and B6, red mullet fillets are perfect to cook en papillote with fresh thyme.
"My favourite (of the mullets) is red mullet. It has perfect flake and skin which, when grilled, smells of rock pools" - Rick
