Cook-along with Rick as he shows you how to make a cook a simple seafood pasta dish with monkfish, chilli, garlic, tomato and parsley. This recipe is perfect for those that don't think they like fish.
220g dried spaghetti
2 vine-ripened tomatoes, diced
200g monkfish fillet
50ml olive oil
1 red chilli, chopped
1 tbsp parsley, chopped
1 garlic clove, finely chopped
Sea salt and black pepper

Start by dicing up the monkfish into bite-sized pieces.
Cook the spaghetti in salted water. Around 8 minutes should be perfect - aim of al dente so the pasta still has some bite.
For the sauce, heat 50ml of olive oil in a pan and start to fry the monkfish pieces, then add the garlic and chilli.
After a few minutes add the parsley and tomato and along to cook for another minute or so.
Combine the pasta and sauce and serve with a cold glass of good white wine.
