Sourced from the fresh clear water around Cornwall, the taste and quality of scallops is second to none.
Scallops have a beautiful, sweet flavour with a soft texture but can turn rubbery if overcooked so leave them slightly opaque in the middle for best results. Either gently steam or sear in a hot pan to get colour on the outsides without overcooking. They can also be grilled in their shells which adds an extra flavour and aroma from the shells being heated.
