Kill the lobster painlessly as described on page 76. Cut it in half and remove the stomach sac and intestinal tract. Cut each tail half into 3 pieces.
Snip off the antennae close to the head with scissors and discard.
Cut off the feeler-like legs as close to the shell as you can with scissors and discard also. Then cut each head section into 2 pieces.
