Rick Stein's Red Curry Paste
Made in Padstow to Rick's recipe. Rick uses this mix of red chillies, garlic and lemongrass cooked down with nam pla, sugar and lime to pour over steaks of fish deep fried Thai-style and it's good to use with chicken in the same way.
