These thin, flat, semi-transparent dried noodles need to be soaked before use, but it is important not to let them get too soft or they will tend to stick together in one lump. Drop them into a pan of boiling unsalted water, take the pan off the heat and leave them to soak for 2 minutes or until just tender. Then drain and rinse with hot or cold water, depending on the dish in which they are to be used. If going into a stir-fry you can toss with a few drops of oil to keep the strands separate. These can be used in clear Asian-style soups, Malaysian laksas, and Thai and Vietnamese stir-fries.
